MUTTON CURRIES



1. MUTTON GRAVEY AND DRY CURRY

Ingredients
Mutton -1/2 kg
Small onion-1 cup
Few ginger, garlic(6 cloves)
Garam masala powder-2 tbsp (recipe given in POWDER section)
Coconut grated-1/4 cup
Big onion -1 sliced or small onion-15
Greenchilly-1 or 2
Oil
Salt
Mustard seeds, uraddal, curry leaves



Method:
In oil sauté small onion, ginger, garlic to golden brown.
Add garammasala powder and mix evenly.
Allow it to cool.
Grind to paste; add water, mix and keep.
Keep some paste aside(2 TBSP)

Add this masala in mutton, also add salt and cook well.

When mutton is ready, take out ¾ th of mutton from gravey and keep aside.
Leave the pieces with bone in gravey.

Grind the coconut to paste.

Gravey:
In oil season mustard seeds, uraddal, curryleaves, add greenchillies, onion and saute well.
Add mutton with gravey.
Add coconut paste and required water.
Boil well .
Leave till gravey consistency.
Sprinkle coriander leaves.


DRY MUTTON CURRY

Ingredients

Cooked mutton from above gravey
Chopped small onion-1/2 cup
Chopped tomato-1
Chopped green chilly-4
Masala paste(from above – kept aside)
Salt
Scrapped coconut-1/4 cup
Tempering items
Coriander leaves
Butter -1 tbsp

Method

Season mustard seeds, uraddal, curryleaves with oil.
Add onion, chillies and sauté well.
Add tomato and sauté well.
Add masala paste and mix once.
Add mutton, salt and mix evenly .
Add butter and mix well.
Add coconut and mix till semi dry.
Sprinkle coriander leaves.

Serves with plain rice, chappathi, dosa.


2. EASY MUTTON CURRY

Ingredients
Mutton -1/2 kg
Finely chopped onion-1 cup
Finely chopped tomato-1/2 cup
Green chilly-3
Ginger garlic paste-1 tbsp
Masala powder-my powder-2 tbsp
Salt
Mustard seeds, uraddal, curryleaves
Coriander leaves

Method

Heat oil in kadhai, season mustard seeds, uraddal, curryleaves.
Add onion and chillies.
Sauté well.
Add ginger garlic paste and sauté till raw smell goes.
Add tomato and sauté well.
Add masala powder, turmeric powder, salt and mix well.
Add mutton and marinate well.
Close the lid and cook in sim for 10 mts.
If need add water after 10 mts and cook well .
It should be in thick gravey consistency.
Sprinkle coriander leaves.

Side dish for plain rice, briyani, chappathi, dosa.




3. MUTTON DRUMSTICK FLOWER KURUMA


Ingredients

Mutton-1/2 kg
D.s flower-1 1/2 cup
Onion-1
Ginger,garlic paste-1 tbsp
Few cloves,cinnamon,elaichi
Oil
Salt

To grind

Coconut-1/2(scrap it)
Dry chillies-7
Cumin seeds-1 tsp
Turmeric powder
Poppy seeds-1/2 tsp

Method

Chop or mince the mutton.
Cook it with salt and ginger,garlic paste.
Marinate the grinded paste in cooked mutton and keep aside.

Splutter mustard seeds,cloves,cinnamon,elaichi,curryleaves.
Add sliced onion ,sauté it.
Add cleaned flower and sauté well.
Add mutton with paste ,mix and cook with required water.
Sprinkle coriander leaves.




4. MUTTON POTATO MASALA

Ingredients
Mutton-1/2 kg
Potato-1/4 kg
Ginger
Garlic-7 flakes
Onion-200 gms
Tomato-100 gms
Coconut scrapped-1/2 cup
Cinnamon,cloves-few
Chilly powder-2 tsp
Dhaniya powder-3 tsp
Turmeric powder-1/2 tsp
Salt
Jeera-1/2 tsp
Oil

Method
Cook the potato,peel skin ,cut it and keep aside.

Grind ginger,garlic,cinnamon,cloves,chilly powder,jeera,dhaniya powder,100 gms onion to paste.

Heat little oil in kadai,add little sugar ,leave it till brown.
Add chopped onion and sauté it.
Add grinded paste and sauté well.
Add tomato and sauted it.
Add mutton,salt,water and cook it.
Then add potatoes,coconut paste and boil well till gravey thickness.
Sprinkle coriander leaves.



5.MUTTON CHUKKA

Tips:soak mutton with curd and cook ,it gives softness.

Ingredients
Mutton-1/2 kg
Chopped onion-1 cup
Chopped tomato-1/2 to ¾ cup
Ginger garlic paste-1 tsp

My garam masala powder or
(G.chilly-5
Chilly powder-1 tsp
Dhaniya powder-2 tsp
Turmeric powder-1/4 tsp)

Salt
Little water


For seasoning;
Cinnamon,cloves,sliced onion,curry leaves and coriander leaves.


Method
Add all the ingredients in cooker(except seasoning ingredients)
Leave whistles and cook well.

Then heat oil in a kadaai,add all seasoning ingredients.
Sauté well.
Add the cooked mutton with masala.
Mix well till dry consistency.
If need .can add pepper powder and mix.

Sprinkle coriander leaves.
Lightly add few drops of lemon for extra taste.
